Ciao friends,
It's Cathy from Vito's! It's been awhile since my last e-mail. How are you? Can you
believe the holidays are HERE?! Where has the time gone?  I guess right now, I'm just
grateful that Vito's is staying busy in a tough economy. I'm so blessed and grateful :)
Thank you The Holiday parties are kicking in, so don't wait until the last minute to make

you! All things are possible! We've added a new menu item this month... 8oz. beef
tenderloin, grilled, and topped with a blue cheese, garlic, shallot, and Cabernet
reduction  served with a side of our sachetini pasta tossed in garlic and olive oil, and a
side of fresh green beans YUMMY!! Come in and check it out! My Husband's
restaurant...Sean Cummings Irish Pub is still a big hit. YEAH! What a great atmosphere
with the Irish bands and all. If you haven't been there yet, you need to go, the fish and
chips are to die for! You can always check us out on www.buyforlessok.com to see our
cooking demos and I just taped a couple of segments for Jennifer Eve who does
Together at the Table on News 9. They're pretty fun! If you find yourself not busy on a
Sunday afternoon, tune into the Guerilla Gourmet on 1000 KTOK  at 11:00. We talk
about...what else?...FOOD! Our favorite subject:) Sean and I did a cooking class last
week and I promised to put a couple of recipes on my website. www.vitosokc.com  but
here's a preview: great to serve at a Holiday party or get- together!!

Italian Stuffed Mushrooms

Ingredients:
30 medium-sized white mushrooms
1/2 cup Italian seasoned bread crumbs (I Iike Progresso)
1/2 cup grated parmesan cheese
2 tblsp chopped flat leaf parsely
2 tblsp chopped fresh garlic
3 tblsp x-tra virgin olive oil
1 tblsp chopped fresh mint
1 cooked Spicy Italian Sausage (optional, if you're vegetarian, leave it out)
1 tblsp fresh ground black pepper

preheat oven to 400  drizzle enough olive to lightly coat a baking sheet, in a bowl,
combine all ingredients except for mushrooms and add only a tblsp of the olive oil,
save the rest  for later. Gently pull out the stem of the mushroom, if it doesn't all come
out, use the end of a teaspoon to dig it out. Fill each mushroom to mound. Place on
baking sheet and drizzle a little olive oil over each one so they stay moist. Pop them in
the oven uncovered for 25 minutes.

They are simply delicious! Good thing about this recipe, it can be made a day ahead of
time. Just wait until they go into the oven to drizzle the olive oil on top!!
